What is Pasta Alla Vodka?

Pasta Alla Vodka is an Italian dish combining pasta - commonly penne - with a vodka sauce. Vodka sauce varies in its preparation, but at its core consists of crushed tomatoes and a splash of vodka simmered down with a creamy component.
The best part - this sauce tastes delicious without the dairy! Willa’s Oat Milk’s use of the whole oat makes our oat milk extra rich and smooth and pairs perfectly with tomato based sauces.

Perfect for a quick and easy weeknight meal

This recipe’s name sounds a little bit fancy, but like so many of our favorite Italian recipes, it is super simple and allows the bright flavor of the tomatoes to shine.
With just a handful of ingredients that you likely already have in your pantry, this recipe is perfect for nights when you can’t figure out what to make with what’s in your kitchen. Just boil your noodles and simmer the sauce ingredients and you have a phenomenal meal you’ll want to make again and share with your friends!

Deliciously creamy without the dairy

Willa’s is the perfect plant milk to use as a dairy substitute because of our unique whole oat recipe. While other oat milks use the oat sugar and discard other parts of the oat, Willa’s uses the entire whole entire oat which means it has a rich and smooth taste, maintains all the benefits of the oats (protein and fiber), and is zero food waste and a better choice for the planet!
Because our oat milk is so creamy, it works great in place of dairy milk. If you’re looking for a richer consistency, go for Willa’s Barista Oat Milk, which has just 3 grams of sugar per cup as we process our ingredients as little as possible. This means Willa’s is great for savory dishes as it is much less sweet than other oat milks on the market, which typically contain 5 to 8 grams of sugar. With even less sugar at only 1 gram per cup, Willa’s Unsweetened Original is also a great option, but note that it is not as rich in consistency as Willa’s Barista. With such little sugar, Willa’s Oat Milk mixes into recipes seamlessly without altering flavor.

Customize to your liking and allergy needs!

Although Pasta Alla Vodka most commonly uses penne noodles, feel free to switch it out with your pasta of choice, including gluten-free varieties.

The red pepper flakes in this recipe add a little heat. Add more red pepper flakes to kick things up a notch, or reduce the amount to tone it down according to your spice tolerance.

The best thing about this recipe is that it tastes incredible on its own, but also provides a great base for your favorite mix-ins and toppings. Add some chopped zucchini, bell peppers, artichokes, mushrooms, or spinach for some tasty veggie nutrients. If you’re looking for more protein, add your favorite plant-based Italian sausage for a more filling meal.

Creamy Pasta Alla Vodka (Dairy-Free)


1/2 medium onion
3 garlic cloves
2 tbsp extra virgin olive oil
¾ cup Willa’s Oat Milk
⅓ cup tomato paste
2 oz vodka
1 tsp red pepper flakes
1 lb pasta of choice
Salt and pepper to taste
Sauteed artichokes, mushrooms, peppers, zucchini, or your favorite veggies (optional)


In a pan, add olive oil. When hot, onion and cook until onions are translucent.
Add garlic and cook for 1 minute along with red pepper flakes
In another pot, boil water. Add salt. Add pasta and cook until al dente.
In the pan with the garlic and onion, add the tomato paste and stir. Let sit for 2 minutes or until the color has darkened.
Add vodka. Stir. Reduce heat.
Add Willa’s Oat Milk. Stir.
Mix in boiled pasta.
Salt and pepper to taste, add toppings if desired, and enjoy!
