Allergy-friendly and dairy free as can be

This mac ’n’ cheese is of course dairy-free, making it perfect for our lactose-intolerant and non-dairy friends, and even better for our planet.

Unlike many vegan mac ’n’ cheese recipes, this rendition is nut-free, using only oat milk and nutritional yeast for that cheesy texture and flavor.

This recipe can be made gluten-free with a couple simple swap-outs. Trade the elbow macaroni for your favorite gluten-free pasta - we love this brown rice macaroni or these gluten-free elbows. Next, swap out the breadcrumbs for gluten-free breadcrumbs, panko, or just omit them altogether. Another great way to add gluten-free crunch is with gluten-free french fried onions, or just toast your vegan cheese on top for a little longer until crispy.

Without all of these common allergens, this recipe is perfect to bring as a side-dish to your next gathering.


Dress it up with your favorite toppings

To make this mac ’n’ cheese a heartier meal, add any of your favorite mix-ins. Broccoli, cauliflower, green onions, and spinach all add amazing flavor and are packed with vitamins and nutrients. For more protein, fry up your favorite vegan sausage or bacon and throw it in.

Sneak in turmeric

Hot tip: don't add everything fully cooked
We recommend adding your extras slightly undercooked to the mac ’n’ cheese before baking to avoid overcooking in the oven. To make things even easier, cook your add-ins completely while the mac ’n’ cheese is in the oven and simply mix them in once the baking is done.

Vegan Baked Mac ’n’ Cheese

Ingredients

12oz elbow macaroni
3 cups Willa’s Unsweetened Original Oat Milk
½ cup nutritional yeast
2 tbsp cornstarch
1 tsp salt
1 tsp garlic powder
½ tsp turmeric powder (optional for color)
3 tbsp water
5 tbsp vegan butter
1 cup breadcrumbs
½ tsp garlic salt
½ cup vegan cheese (optional)

Instructions

Boil pasta and set aside
Add oat milk, nutritional yeast, cornstarch, salt, garlic powder, and turmeric to a saucepan and stir
Bring mixture to a boil over medium heat
Let boil for 3 minutes, stirring occasionally
Turn off heat and stir in 3 tbsp water
Add cooked pasta and mix until combined
Pour mac ’n’ cheese mixture into a greased baking dish
Melt vegan butter in a bowl and mix in breadcrumbs and garlic salt
Sprinkle breadcrumb mixture on top of mac ’n’ cheese
Bake at 350°F for 20 minutes or until golden brown on top
Sprinkle vegan cheese on top and bake for another 5 minutes or until melted
Serve while hot and enjoy!
