A pumpkinny treat actually made with real PUMPKIN!

Fall is here which means we’re obliged to share as many delicious pumpkin recipes as we can. The thing is, more often than not, the pumpkinny treats and pumpkin ice creams you find in the grocery store don’t actually have any pumpkin in them. And nothing beats the flavor of the real ingredient itself!

At Willa’s, we pride ourselves on using wholesome, organic ingredients - the entire whole grain oat, as well as real vanilla extract. The same is true for pumpkin! Why use artificial pumpkin when the real thing is so tasty?

Smoothie bowl ingredients

This recipe is for Pumpkin Oat Milk Nice Cream, which is essentially a super healthy pumpkin smoothie bowl. Willa’s Barista Oat Milk is a perfect choice for dairy free (and of course casein free) smoothies and ice cream. It has a smooth, creamy texture, which works perfectly for this sort of thing. Nobody wants a runny, watery smoothie. 

The texture of this recipe is super savory and also refreshing. It’s ice cream using mostly pumpkin and oat milk.

And this might surprise you, it’s even got another veggie snuck in - cauliflower! It’s practically a frozen pumpkin pie treat, and with this list of ingredients you don’t have to worry about not feeling so great after eating it. We have some friends who use this tactic to get their kids to eat veggies. 

Pumpkin spice flavors

The subtly sweet vanilla flavors really complement the pumpkin and spice flavors in this recipe. Willa’s Barista Oat Milk is made with only real, wholesome ingredients and only has 3 grams of sugar per cup, so you can feel great knowing you’re eating something truly good for you.

And as it goes with all smoothie bowls and dairy free ice cream recipes, you can easily switch it up! And pick different toppings and flavors to swap in or out.

One ingredient you never want to leave out with pumpkin though is salt. With sweet potatoes, squashes, and of course pumpkin, you need the salt to bring out the sweetness of the pumpkin. Without it, you end up with a bitter taste. So don’t forget the salt!

Pumpkin Oat Milk Nice Cream

Ingredients

¾ cup frozen pumpkin puree
1 frozen banana
1 cup frozen cauliflower
Pumpkin spice (to your taste)
Cinnamon (to your taste)
A pinch of salt
Dash of vanilla extract
Vanilla protein powder
1 cup Willa’s Barista Oat Milk or Willa’s Unsweetened Original Oat Milk


Suggested Toppings
Berries
Granola (we love vanilla granola with this one, or something with cinnamon and spice)
Dried Coconut
Pumpkin Spice Blend
Bee Pollen
Nuts (walnuts or pecans seem perfectly paired with pumpkin)

Instructions

Blend smoothie ingredients in a blender or food processor until smooth.
Top with toppings of your choice. We suggested a few that taste amazing with pumpkin.
