It only takes 5 minutes to prepare and the rest is cook time in the over, so it’s a great way to get a full breakfast without taking too much time out of your morning! This is a perfect recipe for one! It makes one serving, so no need to worry about leftovers and reheating. Whether you make it for yourself to start off your day, or mini dishes for friends and family, this is a great way to spread the love!

Whether you’re vegan, vegetarian, or lactose intolerant this recipe will work for you! The base of this recipe is vegan, vegetarian, and dairy free, so you can simply choose the toppings that work best for you! The recipe calls for chocolate chips and pecans, but they can very easily be switched out for something else that you prefer! This also makes the recipe great for hosting, so that you can make small tweaks for each individual guest.

What toppings can you add?

The beauty of the dish is that you can add whatever toppings you want to make it your own! If you’re not a huge fan of chocolate, ditch the chocolate chips and add something a little nuttier, maybe some almond slices. You want something a little more tarte? Add some cranberries! Caroline makes a few recommendations herself: raspberries, figs, blueberries, almonds, walnuts, nutmeg, allspice, and maple syrup!

    Banana Bread Baked Oats

    Ingredients

    ½ banana mashed
    ¼ cup plain rolled oats
    ¼ cup oat milk
    Pinch of cinnamon
    Handful of pecans chopped
    Handful of dark chocolate chips

    Instructions

    1. Preheat the oven to 350°F. Mash the banana into the bowl with a fork until it is soft.
    2. Add in the oats, cinnamon, chocolate chips and pecans. Stir.
    3. Add the oat milk and stir.
    4. Bake in the over for 25 minutes. Remove and let cool for 5 minute before eating.
