High-Protein Vegan Banana Pudding

Ingredients

1 block organic extra firm tofu
1/4 cup organic maple syrup
2 tsp organic cinnamon
1/4 cup Willa’s Oat Milk
1/2 tsp salt
3 organic medium-sized bananas, sliced
1/4 cup @RINDsnacks Dark Cocoa Sea Salt Coconut Crisps

Instructions

1. Combine 2 sliced bananas and maple syrup in a pot. Once the mixture is simmering and banans have softened, remove from the heat.
2. Add tofu, banana-maple syrup mixture, cinnamon, salt, @RINDsnacks Dark Cocoa Sea Salt Coconut Crisps and Willa’s Oat Milk to food processor. Blend until smooth. Transfer to tupperware.
3. Place 1 sliced banana on top of pudding.
4. Let cool for 30 minutes in refrigerator. Top with cinnamon and enjoy!
